Introduction.
Focaccia is a white flatbread usually seasoned
with olive oil and herbs that add flavor such as rosemary, sage and coarse sea
salt. It’s considered a delicacy of
Liguria’s cuisine.
Ingredients:
50g milk.
75 g water.
50 g olive oil.
5g salt.
250g medium flour.
Rosemary, coarse sea salt...
Method:
Step1.
Knead all the ingredients until we have a
smooth dough (up to 20-22ºC).
Step 2.
Rest in block for about 15 minutes, cover with
a cloth.
Step 3.
Roll the dough into a loaf.
Stretch with the roller to form the desired
shape.
Step 4.
Oil the surface and the top of the dough.
Step 5
Allow to ferment until it has doubled its
volume.
Step 6.
Preheat the oven 220ºC.
Step 7
Prick it with a knife.
Sprinkle rosemary and coarse sea salt.
Add optional ingredients above (olives, onion,
salt...)
Step 8.
Bake at 210ºC.
